I know everybody loves pancake for anything especially breakfast on the
weekend. So, I figure out to share how to make your own pancake mix instead
of buying the store's boxed premix. As starters, these for the flour mix...
- 600 g self-raising flour
- 3 tbsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 50g caster sugar
For the batter
- 1 egg
- 1 cup of milk
- 1 tbsp butter
1. Express flour mix : Mix all the ingredients together and store in a
jar.
2. One fine morning when ready to make the pancakes, heat up your
non-stick frying pan without oil.
3. Spoon drops of 1½-2 tablespoons of batter onto the hot pan, when
bubbles appear on the surface of the little pancakes, flip them over to
make them golden brown on both sides. A minute or so a side should do it.
There . Easy as ABC. So, I hope you try this and enjoy.

Chocolate Ganache.
80g pure cream
50g dark chocolate, chopped
25g milk chocolate, chopped
14g butter
50g dark chocolate, chopped
25g milk chocolate, chopped
14g butter
For ganache, pour cream into a saucepan and almost bring to the boil. Add chocolate and stir until smooth. Add butter and mix until well combined. Fill chilled tartlets with ganache and refrigerate for 20-30 minutes to set.

hah. this is for sarara.
this is my very own recipe. I call it as old fashioned choc cupcakes. I created this as I was making cupcakes years ago fulfilling friends' and family' orders as they request for super moist bake-base dark choc cupcakes and, as I also want my cakes to not popping up too high in the cupcakes casing for topping and buttercream on the top. this recipe posted as also requested by my sweet sarara so that she could have something fun to do during her semester break :).
1/2 cup butter
1/4 cup sugar
2 large eggs
3/4 cup all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup unsweetened cocoa powder
1/2 cup milk
1 tsp vanilla essence
well, the steps are always the same. cream the butter and sugar. then pour in the essence and break in the two eggs. beat till they fluff, scoop the flour, that already combined with the baking soda and baking powder, one at a time into the batter. dont bring in the flour all at once. you might make a mess out of that. along came in the choc powder, afterwards pour in the milk into the mixture. mix until well-combined, and it's ready for the cute cupcakes casing. fill in around 3/4 the cupcakes casing and it's ready for the oven that had been 45-minutes-pre-heated for 10 to 15mins.
**choc ganache will be in on the next entry okayy!

here we go.
my pancake recipe.
very simple and super easy, yet fluffy
you will love it.
these are what you need.
2 tbsp of butter/margarine
4 tbsp of sugar
1 egg
3/4 - 1 cup of flour
1 cup of milk
1/2 tsp of vanilla essence
a pinch of cinnamon (optional)
cream the butter and sugar. then break in the egg.
right after that, spoon the flour one at a time into the butter-sugar-egg mixture.
and slowly pour the milk and vanilla essence, also the cinnamon powder.
mix until the batter is well-combined.
pour/spoon/scoop the batter onto the frying pan and let it cook for 2-3min right
before you flip your pancake.
As they are all ready, stack on the serving plate.
Ready to serve with maple syrup (my favourite), choc syrup or maybe home-made blackberry syrup.
If yall wanna know how to make home-made blackberry or any berry syrup, tell me soon.
And I'll post it for you okayy.

Choc chip cookies.
1 cup unsalted butter
3/4 cup granulated white sugar
3/4 cup light brown sugar
2 large eggs
1 1/2 teaspoons pure vanilla essence
2 1/4 cups (295 grams) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups semisweet chocolate chips
1 cup (100 grams) pecans or walnuts, coarsely chopped nuts basically.
first and foremost, cream the butter and both white and brown sugar.
turn the two eggs in to the mixture. and the vanilla essence. salt too.
then, the all-purpose flour and the baking powder. do not pour the the flour altogether.
make it two spoons at a time so that you won't powder yourself by the flour.
mix and don't forget adding the choc chips (and nuts) into the mixture and beat until it's well combined.
scoop using teaspoon onto prepared baking sheets.
bake about 12 - 14 minutes, or until golden brown around the edges.
and you're done.

Corn Custard Pudding.
1 cup custard flour
1 can creamy sweet corn
3/4 cup sugar
1 1/2 cups evaporated milk
3 cups water
combine all ingredients in one big pot and cook with a medium heat until it get creamy and thick.
after that, pour the custard mixture into tupperwares.
let it cool before you put it in the fridge.
cut into bit size cubes to serve.

cake of the week
gonna bake a cheesecake again this weekend
this time gonna be chocolate cheesecake
gonna give each Liza and Amir a slice of it
coz i owe them hehe
am posting this recipe as eid requested for it
and im so gonna tag him later
so here's the recipe
very simple and easy
CHOCOLATE CHEESECAKE
>THE BASE |
| 125g digestive biscuits |
| 60g butter |
| 1 tablespoon cocoa |
| >THE FILLING |
| 175g dark chocolate, chopped small |
| 500g Philadelphia cream cheese |
| 150g caster sugar |
| 1 tablespoon Bird’s custard powder |
| 3 large eggs |
| 3 large egg yolks |
| 150ml sour cream (or just use a 142ml pot) |
| 1/2 teaspoon cocoa, dissolved in 1 tablespoon hot water |
| >THE GLAZE (OPTIONAL) |
| 75g dark chocolate, finely chopped |
| 125ml double cream |
| 1 teaspoon golden syrup |
STEPS;
| 1. | To make the base, process the biscuits to make rough crumbs and then add the butter and cocoa. |
| 2. | Process again until it makes damp, clumping crumbs and then tip them into a 23cm springform tin. Press the biscuit crumbs into the bottom of the tin to make an even base and put into the freezer while you make the filling. |
| 3. | Preheat the oven to gas mark 4/180ºC. Put a kettle on to boil. Melt the chocolate either in a microwave or double boiler, and set aside to cool slightly. |
| 4. | Beat the cream cheese to soften it, and then add the sugar and custard powder, beating again to combine. Beat in the whole eggs and then the yolks, and the sour cream. Finally add the cocoa dissolved in hot water and the melted chocolate, and mix to a smooth batter. |
| 5. | Take the springform tin out of the freezer and line the outside of the tin with a good layer of clingfilm, and then another layer of strong foil over that. This will protect it from the water bath. |
| 6. | Sit the springform tin in a roasting pan and pour in the cheesecake filling. Fill the roasting pan with just-boiled water to come about halfway up the cake tin, and bake in the oven for 45 minutes to an hour. The top of the cheesecake should be set, but the underneath should still have a wobble to it. |
| 7. | Peel away the foil and clingfilm wrapping and sit the cheesecake in its tin on a rack to cool. Put in the fridge once it’s no longer hot, and leave to set, covered with clingfilm, overnight. Let it lose its chill before unspringing the cheesecake to serve. |
| 8. | To make the chocolate glaze, very gently melt the chopped chocolate, cream and syrup. When the chocolate has nearly melted, take off the heat and whisk it to a smooth sauce. Let it cool a little, and then Jackson Pollock it over the chocolate cheesecake on its serving plate. chicken thigh pie.YUMMs!
this recipe is dedicated to mun,a good friend of mine.she had requested of chicken pie recipe,i suggest her this one :) love the taste and one of my favourite pie recipe.
so mun,here it goes.
6 sweet potatoes or just potatoes, peeled and cut into dices
1 tablespoon extra virgin olive oil (EVOO) or just oil
2 pounds boneless, skinless chicken thighs, cut into bite-size pieces
Salt and ground black pepper
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock
1/4 cup orange or pineapple juice(optional)
1/2 cup barbecue sauce
1 cup frozen peas, defrosted
2 boxes cornbread mix, such as Jiffy brand or any cornbread mix
2 eggs
2/3 cup milk
PREPARATION ^^
Pre-heat the oven to 400°F for the cornbread (if you're using Jiffy brand), or pre-heat according to the package directions.
Place a medium size saucepan over medium-high heat with the sweet potatoes and enough cold water to cover them. Bring the water up to a bubble, then reduce the heat to medium and boil the sweet potatoes until tender, about 15 minutes. Drain the cooked potatoes and reserve.
While the potatoes are cooking, place a large skillet over medium-high heat with one turn of the pan of EVOO, about 1 tablespoon. Season the chicken thighs with salt and pepper and add to the hot pan. Cook the chicken, stirring occasionally, until golden brown, about 5 minutes.
Remove the browned chicken to a plate and add the butter to the pan to melt. Sprinkle the flour over the melted butter and cook for about a minute. Whisk the stock and juice into the butter-flour mixture and cook until thickened, about 1 minute. Add the barbecue sauce, peas and the reserved chicken and potatoes to the pan, then stir to combine. Season again with salt and pepper and transfer to a casserole dish.
Prepare the cornbread batter according to the package directions. Spread the batter over the top of the casserole and bake until the bread is cooked through, about 12-15 minutes. Cut the casserole into slices and serve.

1/2 tin condensed milk
1 1/4 cup water
1 1/2 cup sugar

2tsp vanilla essence
first thing first,caramelized the 4tbsp sugar directly in a pan on stove.
whisk until frothy
but before that dont forget to makesure the water at the bottom of the steamer is boilingsteam for about 20-25mins until it cooked
cool it in the fridge and ready to serve
....and turn it over in a huge plate berofe serving it

my family and i do enjoy pancakes very much no matter during breakfast, brunch, lunch, [so many to list down] or even dinner. so here, i published one of my pancake recipes. it's so easy that everybody could try. go ahead. you'll love it.
banana pancakes
• 115g plain flour or all purpose flour
• 1 teaspoon baking powder
• 140ml milk (i prefer full cream)
• a pinch of salt
• 2 knobs of butter
• 3 tablespoons caster sugar
• 4 bananas
• crème fraîche,or fresh cream to serve on top
serving for 6

Separate the eggs, putting the whites into one bowl and the yolks into another.
Combine the plain flour, baking powder and milk with the egg yolks and mix until it forms a smooth, thick batter.
As for the white,whisk with the salt until they form stiff peaks.
Fold the whites into the batter – it is now ready to use. Heat a non-stick frying pan over a moderate heat.
Pour some batter into the non-stick frying pan and fry for a couple of minutes until it starts to look golden and firm. Loosen with a spatula and turn or flip the pancake over.

Melt the butter and sugar in a separate pan over a low heat until they form a caramel sauce – about 3 mins.

Serve them on the pancakes topped with a good spoonful of crème fraîche or fresh cream... or maybe whipped cream[PERFECT~!!].
